Ingredients:

  • 1 stick butter
  • 1 cup sugar
  • 1 1/2 cups flour (sifted, self-rising)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 tablespoon sour cream
  • 2 tablespoons water

Filling:

  • 3 apples
  • 1 teaspoon cinnamon powder
  • 1 tablespoon sugar
  • 1/2 cup chopped walnuts
  • Cook Time 20 minutes

Dough:

  • Cut 1 stick of butter (or shred), mix it with 1 cup of sugar and mash the butter with a fork or knife until it will turn into butter crumbs.
  • Add 1 1/2 cup of flour, mix very well with butter and sugar.
  • In a cup mix 1 egg, 2 tablespoons of water, and 1 tablespoon of sour cream. Pour into the butter-sugar-flour mixture and knead the dough. The dough will be very tender and fragile. Form out of the dough two balls and put the dough into the freezer for 10 minutes.

DIRECTIONS:

Filling:

Wash, peel and chop the apples into midsized chunks; add sugar, cinnamon and walnuts.

Set aside.

Forming the Rolls:

Take one ball of dough and gently roll it out with a rolling pin. This dough is fragile so don’t press too hard. Cut the dough layer into two halves. (This will be your two big rolls that you will cut into the small bite size rolls) on one half of the dough spread a layer of cream cheese then the apple filling. Roll the layer with filling included and cut into the small bite size rolls crosswise.

Put the small rolls on a baking dish 4-5 inches away from each other as they will become bigger while baking.

Repeat the same procedure with the second half of rolled out dough and with the second ball of dough.

Bake at 350 degrees F. for 20 minutes or until golden brown.

Baked Sweet Potato Fries

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients:

  • Sweet potatoes. Plan on at least one per person.
  • A big sprinkle of corn starch. (optional)
  • Olive oil. A couple of tablespoons or so.
  • Salt, pepper and spices, cumin, cayenne pepper, paprika, garlic or curry powder. It’s up to you.

Directions:

  • Preheat oven to 450 degrees F. Peel the sweet potatoes and cut them into fry-shaped pieces. Try to cut them into similarly sized pieces so fries will bake evenly.
  • Toss uncooked fries into a mixing bowl, plastic bag, or just onto your baking sheet. Sprinkle with cornstarch (if using) and pour in a few tablespoons of olive oil (enough to lightly coat fries). Season with salt, pepper, and preferred spices. Use about half a teaspoon per potato. Mix/shake to distribute evenly (corn starch should be evenly mixed in so there are no powdery spots).
  • Pour fries onto a non-stick baking sheet or a baking sheet covered with parchment paper (aluminum foil produces mixed results). Arrange fries in a single layer. Keep them in a single layer, otherwise they will never get crispy. Give each fry a little room on the baking sheet.
  • Bake for 15 minutes, then flip the fries so they can cook on all sides.
  • Bake for 10 to 15 more minutes, until the fries are crispy. The fries are done when the surface of the fries changes from a shiny orange to a more matte texture.

Apple Butter Dipping Sauce

Yield: Approximately 1 1/4 cups

Ingredients:

  • 1 cup prepared apple butter
  • 1/4 cup prepared honey BBQ sauce
  • 1/4 cup butter, melted
  • 1 tsp. ground cinnamon

Directions:

Combine all ingredients in small saucepan or microwave safe bowl. Heat and serve warm alongside prepared Baked Sweet Potato Fries.
